Envynyc's Brown Sugar Buttermilk Pancakes With Lemon

Beat eggs, lemon zest, buttermilk, and brown sugar. Slowly whisk in melted butter. In a separate bowl mix flour, baking powder, baking soda, and salt. Add egg mixture to flour and mix well. If it's too thick add a bit of regular milk until it reaches the consistency you like. I find that the thicker I make the batter, the fluffier the pancakes.
