Metric Cups

For the Crostini

  • 20 slices baguette (day old, thin)
  • 1 centimetre thick olive oil

For the Roasted Cherry Tomatoes

  • 10 cherry tomatoes
  • 1 olive oil
  • 1 tablespoon balsamic vinegar
  • 1 salt
  • 1 pepper

For the Avocado Purée

  • 1 large hass avocado (ripe)
  • 150 grams goat's cheese (fresh and creamy)
  • ½ lemon (juice and zest)
  • 1 tablespoon olive oil
  • 1 clove garlic (peeled)
  • 2 dashes tabasco
  • 1 salt
  • 1 pepper

For the Crostini

For the Roasted Cherry Tomatoes

  • 10 cherry tomatoes
  • 1 olive oil
  • 1 tablespoon balsamic vinegar
  • 1 salt
  • 1 pepper

For the Avocado Purée

  • 1 large hass avocado (ripe)
  • 5⅓ ounces goat's cheese (fresh and creamy)
  • ½ lemon (juice and zest)
  • 1 tablespoon olive oil
  • 1 clove garlic (peeled)
  • 2 dashes tabasco
  • 1 salt
  • 1 pepper

Method

Avocado-Goats Cheese Crostini With Roasted Cherry Tomatoes is a community recipe submitted by erickarl78 and has not been tested by Nigella.com so we are not able to answer questions regarding this recipe.

  • Preheat the oven to 180 degrees C/350 degrees F
  • To make the crostini, place the bread slices on a flat baking tray brushed with olive oil. Brush the bread with olive oil. Bake until crispy and golden brown, about 10 minutes. Set aside in a dry place until needed.
  • To roast the cherry tomatoes, preheat the oven to 150 degrees C/300 degrees F. Cut the tomatoes in half and place on a baking tray. Drizzle with olive oil and balsamic vinegar; sprinkle with salt & pepper and roast for 30 minutes.
  • To make the avocado puree, place all the ingredients in a food processor and puree until smooth. Taste to check seasoning.
  • To assemble, place a tsp of the avocado puree on top of each crostini, and garnish with a roasted cherry tomato half. -Chopped chives or flat-leaf parsley can be used as an extra garnish. -Buy the avocados ahead of time to ensure they are ripe. Hass avocados are tastier and creamier; but other avocados can be used.
