Ingredients

Serves: 4

Metric Cups
  • 4 pork chops
  • 1 packet mozzarella
  • 2 apples
  • cider
  • sugar
  • butter (or a jar of apple sauce if you can't be bothered to make your own)

Method

  • Peel and chop the apples, sweat them off in a saucepan with the butter and sugar (that is why there are no quantities cause I put in as much or as little depending on my mood!).add the cider and let it reduce.
  • Meanwhile, grill the pork chops on both sides but slightly more on one side.
  • Cut the mozzarella in to strips.
  • Take the chops, spread a little or a lot of the apple sauce on to the chop and cover the whole thing with mozzarella cheese then put it back under the grill until the cheese is golden but not burned.
  • I serve it with roast potatoes, mash potatoes, or rice and green veggies (usually curly kale with butter, lemon juice and toasted sesame seeds)
