Ingredients

Metric Cups
  • 1 tablespoon oil
  • 3 cloves garlic
  • fresh ginger (a small knob)
  • 2 onions (finely chopped)
  • 200 grams mushrooms
  • 125 millilitres coconut milk
  • salt
  • 1 teaspoon dried chilli flakes
  • 1 tablespoon oil

  • 4⅖ fluid ounces coconut milk

  • 1 teaspoon red pepper flakes

Method

  • Heat the oil in a large pan and add the ginger and garlic. Fry for a couple of seconds.
  • Add the onions and stir fry until they are softened. Add the mushrooms and chilli flakes and stir-fry for a couple of minutes.
  • Now add the coconut milk and bring to a boil. Let it simmer until the liquid has reduced in half.
  • Season with salt to taste. Feel free to garnish with some chopped coriander.
  • Serve immediately.
