Melt the butter and sugar together then allow to cool slightly, then whisk in the alcohol. I whip up as much cream as I want then add the mixture to taste. It keeps very well in a covered jar in the fridge , but once mixed with cream it needs eating quickly- not difficult!

This recipe comes from Sainasburys magazine of years back, it is to die for, and is perfect with Christmas pudding.

Serves: 4
- 4 ounces butter
- 8 ounces soft brown sugar
- 2½ fluid ounces port
- 2½ fluid ounces medium sherry
- 1½ pints heavy cream (or double cream)
