Twenty Minute Tomato Soup

Something i love doing when i come back from work dead like a dog :P and I have no time to play kitchen mama for hours so I make this soup which is sooo easy and delicious:) and it really takes 20 min top to make! No kidding! Serves originally 2 people but double the portions and it's good for more guests!

Ingredients

Serves: serves 2

Metric Cups
  • 1 can tomato (chopped or not, it doesn't matter)
  • 1 carrot (cut in slices)
  • 1 clove garlic (cut up into slices)
  • 1 teaspoon tomato puree
  • oregano
  • salt
  • pepper
  • 1 tablespoon flour
  • 1 teaspoon sugar
  • ½ lemon (a squeeze)
  • olive oil
  • bread (doesn't have to be fresh, cut up in small cubes)
  • 1 can tomato (chopped or not, it doesn't matter)

Method

Twenty Minute Tomato Soup is a community recipe submitted by gangrena and has not been tested by Nigella.com so we are not able to answer questions regarding this recipe.

  • In a saucepan pour in some oil to cover the bottom of the pan, throw in carrot, fry a little, then throw in the garlic.
  • When fried up so the carrot is less orange, more goldish, take the pan of the fire, put in everything except for the bread.
  • Boil for 5-10 min.
  • Blend it with a blender, cook again for a few min so its hot.Yyou can give in some Tabasco sauce to spice it up, but not everybody likes it that way.
  • Take a frying pan, pour in oil, throw in bread, mix it with your hands so the bread is in oil, you can mix in a garlic clove crushed, salt, pepper, and fry mixing it from time to time so it doesn't go black:)
  • Do this for 5 min and its ready. comes out golden:) soup in a bowl, bread cubes in a bowl next to it and you're ready to eat!:)
