Apple Pudding

Preheat the oven to 180oC/350oF/gas 4. Place the cooking apples, sugar and water in a small saucepan on a low heat. With the lid on, cook for about 10 minutes, stirring every now and then, until the cooking apples are soft. Pour into a 1 litre (1 ¾ pt) shallow pie dish, or into 8 individual ramekins. In a bowl, beat the butter. Add the sugar and beat again, then add the eggs and vanilla, gradually, still beating, then fold in the flour to combine. Spread this over the cooking apple, sprinkle with sugar and cook in the preheated oven for 40-50 minutes until the centre of the sponge feels firm, or a skewer inserted into the centre comes out clean. This is lovely with custard!

- 4⅖ ounces superfine sugar
- 2 eggs Beaten
- ½ teaspoon vanilla extract
- 4⅖ ounces self-rising flour
- ⅞ ounce superfine sugar For sprinkling
