Oven 180c,350f,gas 4 Grease 9" spring form tin Cover dates with boiling water Cream butter and sugar, Gradually add eggs, Fold in flour and cinnamon Add bicarb and essence to dates. Pour onto creamed mixture and Stir until thoroughly mixed Put into prepared tin, bake approx 1-1 1/4 hours until well risen and firm. Leave in tin Make topping by heating gently the butter,sugar and cream.when sugar dissolved bring to boil then simmer for 3 mins. Pour over cake and grill until top bubbling. Leave in tin until topping set, then remove and cool on cake wire

For the Cake
- 8 ounces chopped dates
- 10 fluid ounces boiling water
- 4 ounces soft butter
- 6 ounces superfine sugar
- 3 eggs (at room temperature, beaten)
- 8 ounces sifted flour
- ½ teaspoon cinnamon
- 1 teaspoon baking soda
- 3 drops vanilla essence
For the Topping
- 3 ounces soft brown sugar
- 2 ounces butter
- 9 teaspoons heavy cream
