Introduction

As usual - Cheats paradise. I make the sauce and keep it in the fridge and then heat it up when I want it, This is fine though as the seafood is only going to be heated once before eaten. Sometime I ladle into a pot and take to work for lunch, and heat in the microwave.

Ingredients

Serves: 2

Metric Cups
  • 1 packet mixed seafood (cooked)
  • 1 packet king prawns (cooked)
  • 2 cans chopped tomatoes
  • 1 tablespoon olive oil
  • 3 tablespoons sweet chilli sauce
  • 1 teaspoon basil leaves (chopped)
  • 1 teaspoon fresh oregano (chopped)
  • 1 teaspoon fresh thyme (chopped)
  • 1 pinch of black pepper
  • 1 pinch of salt
  • 1 splash of white wine vinegar
  • 4 handfuls pasta (twists)
  • Parmesan cheese (to finish)

  • 1 tablespoon olive oil
  • 3 tablespoons sweet chile sauce
  • 1 teaspoon basil leaves (chopped)
  • 1 teaspoon fresh oregano (chopped)
  • 1 teaspoon fresh thyme (chopped)
  • 1 pinch of black pepper
  • 1 pinch of salt
  • 1 splash of white wine vinegar
  • 4 handfuls pasta (twists)
  • Parmesan cheese (to finish)

Method

  • Put chopped tomatoes. Olive Oil, Sweet Chilli Sauce Dried chopped Basil, Dried Chopped Oregano, Dried chopped Thyme, Black pepper, salt and white wine vinegar in a sturdy saucepan and simmer for a good fifteen minutes. take a slurp of the sauce and adjust to your taste, Turn off and remove from heat to cool.
  • Boil water for pasta twists and cook as per instructions but drain and rinse in cold water a couple of minutes before it is due to be cooked to your taste. coat gently in a little olive oil so it is not sticky. when cool, store in fridge in Tupperware box.
  • Allow the sauce to get completely cold and then stir in the prawns and the seafood. Store in fridge in Tupperware box
  • When ready to heat stir sauce into some of the pasta and heat in microwave or pan on stove as required.
  • Ensure piping hot throughout before eating.
  • Add a dash of parmesan to be decadent!! Enjoy.
