Noisettes of Lamb With Blackberry Gravy

Introduction

Another one of my first Dinner Party favourites. Cheats simple but lovely.

Ingredients

Serves: 4

For the Noisettes of Lamb and Blackberry Gravy

  • 8 lamb noisettes
  • 2 cloves garlic (crushed)
  • 2 sprigs fresh rosemary
  • 2 splashes of olive oil
  • 1 splash of red wine
  • 1 tin blackberries (in water, a large tin)
  • 1 teaspoon sugar
  • 2 teaspoons gravy granules (or cornflour)

For the Serving

  • any vegetables (any veg you like but I always have sugar snap peas, baby corn and sauteed potatoes with sprinkles of salt and dried rosemary - cook at your leisure)

Method

  • Place Noisettes of lamb in a large tupperware box with a couple cloves crushed garlic, crushed sprigs rosemary olive oil. leave overnight in fridge.
  • To prepare Gravy, tip Blackberries, and water from tin, sugar, splash of wine in saucepan and simmer down for fifteen minutes.
  • push sauce through sieve, to remove pips and return to pan. add a teaspoon of watered down gravy powder to thicken sauce and give it that savoury edge. If you cant bear to use Gravy powder use cornflour to thicken. leave to simmer on very low heat while you cook the lamb.
  • Place the noisettes of lamb on grill pan and spoon over olive oil. Grill for 4 minutes on each side (to your taste really!) until brown and crisp but tender in middle.
  • Serve with the Veg and drizzle the sauce over the Noisettes. How posh is that!!
