Perfect Chicken Marinade

Peel the cloves of garlic and place them in your mortar Add 1 whole red chilli Add a good pinch of sea salt Add a good pinch of peppercorns Add a good pinch of cumin seeds (toast the cumin seeds in a dry pan first, on a high heat wait till you hear the little fella's popping and your met with a fantastic smell, don't burn em!) Now the fun bit, give it all a good pounding with your pestle and mortar until a paste develops, add the good glug of oil and the juice of 1 lime, give it a goo mix and you're good to go! Pour over chicken (fillets, leg, breast, anything you want) get your hands involved and give the chicken a good bath in the mix. Leave in the fridge for a few hours and cook.

- carotino oil (or olive oil - a good glug)
- 1 red chilli (fresh)
- cumin seeds
- sea salt (crystals)
- black peppercorns
- 1 lime
