You need to boil this in a large 5 quart pot. Take kale and chop it into very small pieces. This might seem difficult because kale is so leafy but do it by hand not in the food processor because you wont get the right texture. Peel the beets and chop them into chunks. Don't worry if they are not perfect chunks this is a really earth warm soup. Chop white and sweet potatoes with the skins on into 1/2 inches chunks and add to pot. Chop each tomato into 4 pieces and add to pot. Peel and dice garlic. Large-ish pieces are ok, b/c when this cooks the flavour will disperse through the soup. Add chopped carrots and radishes boil till kale leaves are tender. Serve in wide shallow bowls.
Introduction
This is a soup I feed my dad because he needs the anti-cancer fighting agents and so do I; genetics you know. It's very flavorful and it's the only way to get him to eat a vegatable or two.

- 6 medium beets
- 12 cloves garlic
- 2 handfuls kale
- 10 medium tomatoes
- 2 medium sweet potatoes
- 3 large white potatoes
- 15 radishes
- 3 unpeeled carrots
- ½ cup olive oil
- salt (to taste)
