Ginger Lemon Chicken With White Rice

Mix lemon juice with garlic powder and ginger paste. Marinate the cubed chicken in the lemon juice mixture as long as possible (min. 1 hour, up to 1 day). Take the chicken out of the lemon, and keep the lemon on the side. Fry the chicken in butter on high for a few minutes till it gets white, and then lower the heat and keep them cooking till they are done, around 20 minutes. While this is cooking make the white rice on the side using 2 cups rice to 4 cups water. Add the garlic and ginger slices to the chicken and cook till they are soft. Add the lemon mixture, and cook for 3-4 more minutes. Add salt and pepper to taste. Serve the chicken with the sauce on white rice. You can serve with roasted cashew nuts if desired.

- 2 teaspoons garlic powder
- 2 tablespoons thinly sliced fresh gingerroot

- salt (to taste)
- pepper (to taste)
- 2 cups white rice
- 4 cups water
- roasted cashew nuts ( to decorate)
