Mediterranean Style Fresh Tomato and Garlic Spaghetti

Fry up the pancetta and put to the side and put your pasta on to boil. Blanche your tomatoes and peel, liquidise with the garlic and the olive oil. Remove from blender, add salt and pepper to taste. Add handful of fresh basil leaves (torn), some halved cherry tomatoes and the fried pancetta. Add this to some spaghetti with a splash of balsamic, grated parmesan (I have mine with some fresh rocket leaves) have some nice crusty bread to hand... it's really tasty! (also goes well with a glass of your favourite white wine : ) Enjoy.x
