- 2 tablespoons light soy sauce
- 1 tablespoon hoisin sauce
- 1 tablespoon toasted sesame oil
- 4 tablespoons peanut butter (smooth)
- 75 grams cooked chicken (shredded)
- 1 tablespoon sesame seeds (toasted)
- 1 teaspoon fresh ginger (grated)
- 1 red pepper (cut into strips)
- 1 green pepper (cut into strips)

- 2⅔ ounces cooked chicken (shredded)
- 1 tablespoon sesame seeds (toasted)
- 1 teaspoon fresh gingerroot (grated)
- 1 red bell pepper (cut into strips)
- 1 green bell pepper (cut into strips)

- Cook the noodles in boiling water in the time it says on the packet.
- In a small bowl, whisk togehter the other ingredients apart from the sesame seeds.
- Drain the noodles and toss with the asian sauce, peppers and chicken.
- Sprinkle over the sesame seeds and serve.

Additional Information
If you have a nut allergy, just leave the sesame oil and seeds out, it will still taste good. If the sauce is too thick just add a splash of soy sauce or water.

This is tasty but the sauce was very thick so I just will add a tablespoon of peanut butter next time, I use organic 100% peanut nut butter so perhaps that makes a difference and more soy sauce. It was difficult to stir through the noodles but a very easy concept.
