Mix butter and digestives and press into a loose bottom cake tin firmly Mix cheese and eggs together add sugar and pineapple. Pour over digestive base and bake at 190 for 20 minutes. Remove from oven leave for 10 minutes and pour over sour cream and sugar put back in oven for 5 - 8 minutes. Leave to cool and turn out. Do not try to cut until it has been in the fridge for at least 12 hours.

Serves: 6-8
- 8 large digestive biscuits (crushed very fine)
- butter (1.25 square cm - melted)
- 2 tubs cream cheese
- 3 slices pineapples (tinned, cut into small pieces - or one small tin of crushed pineapple, drained)
- 125 grams sugar
- 2 eggs
- 1 tub sour cream
- 2 teaspoons sugar (mix with the sour cream)
