Corn Fritters

Ingredients

Serves: 8-10 fritters

  • 1 tin sweetcorn
  • 1 egg
  • 1 cup all-purpose flour
  • 1½ teaspoons baking powder

Method

Corn Fritters is a community recipe submitted by jaxstar84 and has not been tested by Nigella.com so we are not able to answer questions regarding this recipe.

  • Separate egg, add corn juice to the yolk, mix together then add corn and S&P.
  • Sift flour and baking powder over mix (add ice cubes to stop it becoming too heavy/chewy) and gently combine.
  • Whisk whites until they are stiff and fold into mixture.
  • Leave mix for 20mins then cook in a pan until you see bubbles coming through, and flip.
  • Serve with sweet chilli sauce and sour cream, chunky salsa or guacamole.
  • Additional Information

    Additional herbs and spices can be added to the mix to give it more flavour, but this is just the base mix.
