Ingredients

Metric Cups
  • 1 potato (diced)
  • 1 bacon
  • 1 cottage cheese (fat free)
  • 1 small onion (grated)
  • 1 dash sweet chilli sauce
  • 1 mayonnaise
  • eggs

Method

Awesome Potato Salad is a community recipe submitted by jdholroyd and has not been tested by Nigella.com so we are not able to answer questions regarding this recipe.

  • Peel and chop potatoes into bite size pieces; boil until soft enough to eat but not soft enough to mash. In other words as you would for a salad.
  • Boil eggs. It takes seven minutes to do a hard boiled egg. Do this one so that the yokey bits are softish and moist, in other words for about six minutes.
  • Once eggs are done, grate, but ait for them to cool first. Fry bacon with onion. Add dash if sweet chilli sauce. Very nice flavour. Add crushed garlic if you are so inclined.
  • Toss it all together in a bowl, add fat free cottage cheese and mayo. again amounts are as you wish. Make sure that it is all thoroughly mixed. this salad has a beautifully creamy texture and every bite is a wonderful surprise. It's very delicious.
