Boil shrimp until just cooked. Drain and plunge in icy water to cool. Drain and peel. Peel cucumber and cut into large but bite size chunks. Peel and chunk avocado. Toss all together with a bit of olive oil, lemon juice and salt and pepper.
Introduction
I love the combination of shellfish like shrimp, crab or lobster combined with creamy avocado and cool crunchy cucumber. This really is so good, and i really am so greedy, that I tend to only make this only when I am alone so I don't have to share it with anyone. At least it's low carb!
