Ingredients

Serves: 3

Metric Cups

For the Marinated Chicken

  • 2 large chicken breasts (cubed)
  • soy sauce
  • 4 teaspoons ground ginger
  • 1 teaspoon cekur
  • 1 teaspoon sambal
  • 1 onion (finely chopped)

For the Sauce

  • 3 tablespoons peanut butter
  • 1 tablespoon soy sauce
  • 2 teaspoons ground ginger
  • 1 tablespoon creamed coconut
  • 1 teaspoon sambal
  • 1 teaspoon cekur
  • 1 teaspoon ground lemongrass
  • ½ teaspoon ground galangal
  • ½ teaspoon ground cumin
  • water (to mix)

Method

  • Mix together the marinade ingredients in a bowl and marinade the meat for 2 hours.
  • Thread the marinated meat onto skewers. Mix together the sauce ingredients with water to make a thick 'spooning' sauce.
  • This can be served warm or cold.
  • Grill or barbeque the meat and serve with boiled rice and the sate sauce.
