Mix together the marinade ingredients in a bowl and marinade the meat for 2 hours. Thread the marinated meat onto skewers. Mix together the sauce ingredients with water to make a thick 'spooning' sauce. This can be served warm or cold. Grill or barbeque the meat and serve with boiled rice and the sate sauce.

- 4 teaspoons ground ginger
- 1 teaspoon cekur
- 1 teaspoon sambal
- 1 onion (finely chopped)
For the Sauce
- 3 tablespoons peanut butter
- 1 tablespoon soy sauce
- 2 teaspoons ground ginger
- 1 tablespoon creamed coconut
- 1 teaspoon sambal
- 1 teaspoon cekur
- 1 teaspoon ground lemongrass
- ½ teaspoon ground galangal
- ½ teaspoon ground cumin
- water (to mix)
