Spicy Cauliflower Soup

Chop the onion roughly and break the cauliflower into florettes. Melt the butter in a large heavy-based pan over a lowish heat and add the onion and cauliflower, allowing them to soften for a minute or two. Add the turmeric, ground coriander and cumin and stir, cooking for a further minute or two. Pour in the hot stock and allow to simmer for 45 minutes. Blitz with a stick blender or food processor and serve with crusty bread.

I loved this soup. Since I live alone I only made one serving and did it very fast by microwaving the onions in a bit of olive oil for one minute and steaming the cauliflower in a microwave steamer for 2 minutes. Put the rest together and heated it through and it was delicious hot and steaming. I'm thinking I'll make the rest of the cauliflower into soup and hope that it freezes well. Does anyone know?
Absolutely delicious and great for Weight Watchers people. I added some garlic as I'm a garlic fiend. Amazed how creamy it tasted without the addition of cream as other recipes suggest. Thank-you for sharing.
Just tried this and it is very tasty, light and low in calories...almost zero points on weight eat hers diet. Delicious!
