Put flour in bowl and rub butter in. Add sugar and eggs. Mix together to resemble dough. Knead with hands. In another bowl add cheese and add some sugar to sweeten (should taste a little sweeter than needed) and add tsp of custard powder. Mix well. Roll out pastry and line an oven proof pie dish with the pastry, make sure you have left some pastry to roll out and cover top. Spoon in the cheese filling then roll out remaining pastry and cover top. Sprinkle top with some sugar and bake in a preheated oven at 180 degrees/ Gas mark 4 for 30 mins or till golden brown.

- 16 ounces self-rising flour
- 8 ounces butter (or margarine)
- 8 ounces superfine sugar
- 2 eggs
- 1 teaspoon custard powder
- 16 ounces fresh farmer’s cheese or Neufchâtel (for deep filling)
