Chicken and Rice Greek Style

Introduction

I would love to share this delicious recipe with fellow food lovers as it just combines my favourites in one: chicken, lemon, rice, garlic, olive oil. It's just a comforting breeze of the Mediteranean wherever you happen to be in the world. I hope you enjoy it.

Ingredients

Serves: 4-6

  • chicken thigh fillets (or breast)
  • 4 lemons (juiced)
  • ¾ cup olive oil
  • 3 cloves mashed garlic
  • oregano
  • 2½ cups rice

Method

  • In a bowl (or even a bottle) prepare the sauce by just mixing the olive oil with the juice of the 4 lemons with salt, pepper and then combine with the 3 or cloves of garlic (mashed). At the end add the oregano. Mix it up until all combined. Add 1 cup of water.
  • place the chicken pieces in a dish and then pour the sauce over the chicken until almost covers or completely covered
  • Place chicken in over for the next 45 minutes (depending on your oven) until cooked. Chicken does not have to be brown, it will be whiteish in colour and should be lovely and tender.
  • whilst the chicken fillets are cooking, simply boil the rice: 2 1/2 cups of rice therefore 5 cups of water. Add some salt and a sprinkling of oregano at the end.
  • when chicken is done serve over rice and pour sauce over....and then eat!
  • Additional Information

    Works very well with salad Greek Style also which could just simply be: - lettuce - tomatoes (any sort) - some oregano - white vinegar , olive oil, salt dressing - fetta cheese - onion (very thinly sliced) - cucumber - olives
