Metric Cups
  • 125 grams butter
  • 2 tablespoons dark cocoa powder
  • 300 grams icing sugar
  • 1 teaspoon instant espresso powder
  • 1 egg
  • ⅗ packet rich tea biscuits (broken up)
  • 125 millilitres pecan nuts
  • 4 ounces butter
  • 2 tablespoons dark cocoa powder
  • 11 ounces confectioners' sugar
  • 1 teaspoon instant espresso powder
  • 1 egg
  • ⅗ packet Marie/Maria biscuits (broken up)
  • 4⅖ fluid ounces pecan nuts

Method

  • Melt butter in pan, add cocoa Stir in icing sugar (should be very thick, stiff) Add the espresso powder
  • Remove pan from heat, crack the egg in and immediately start mixing with electric mixer.
  • Return to heat and continue mixing till smooth and glassy
  • Remove from heat. add broken biscuits and nuts
  • Press into dish, so it rests about 2cm thick, place in fridge to set for +- 4 hours.
