Pizza Toast

Toast one side of the bread until just brown. Turn it over and spread with a thick-ish layer of the tomato puree. Top with lots of cheese and grill until bubbling. Sprinkle over the dried herbs and lots of black pepper. Eat and feel instantly better!
Introduction
This is barely a recipe, more a hangover buster to beat all. Also a must for anyone who likes their belly filling with very little effort!

- bread (thick, sliced - preferably white)
- tomato puree
- mixed dried herbs
- cheese (lashings, grated cheese - mature cheddar is best)
- onions (thin slices - optional)

I do this all the time minus the onions, as I think cheese tomato and basil are the holy trinity of fast food flavour combinations... I have so many hangovers! I have an induction hob, so things are really painless and effortless... What I sometimes do, is get the ring molds out, and I stick a white bun half (liberally coated with tomato puree) and topped with grated mozzarella and hand rubbed dry basil. Stick it under the grill and in minutes, you have a beautifully cheesy molten topping, with a super soft bun underneath. Gorgeous! The textural contrasts are amazing.. But I only do that when I'm drunk... :p
