Mix the dressing ingredients in a jar: coconut cream, ginger, lemon juice, sugar, curry powder and turmeric. If you cook your own prawns, make sure they have chilled before placing them in the salad bowl. Arrange other ingredients in a large flat salad bowl/platter, pour over the dressing and serve. You could also use bbq chicken or experiment with other seafood in this salad.

- 2 large mangos (ripe but firm, peeled and diced)
- 1 large avocado (ripe)
- 1 lettuce (washed and torn)
- 3 shallots (sliced finely)
- 125 millilitres coconut cream
- 1 teaspoon fresh ginger (finely grated)
- 2 tablespoons lemon juice
- 2 teaspoons sugar
- ½ teaspoon curry powder
- ¼ teaspoon turmeric
- 2⅕ pounds shrimp (cooked, peeled and deveined)
- 2 large mangos (ripe but firm, peeled and diced)
- 1 large avocado (ripe)
- 1 lettuce (washed and torn)
- 3 shallots (sliced finely)
- 4 fluid ounces coconut cream
- 1 teaspoon fresh gingerroot (finely grated)
- 2 tablespoons lemon juice
- 2 teaspoons sugar
- ½ teaspoon curry powder
- ¼ teaspoon turmeric
