Ginger Syrup

Mix 1 cup sugar and 1 cup water in a sauce pan. Bring it to a boil. Simmer gently until the sugar dissolves. Stir occasionally. Add 1/2 cup of thinly sliced fresh gingerroot. Simmer for 15 minutes. Remove from heat; let cool, then add 2 Tablespoons of lemon juice. Pour into container and refrigerate until ready to use.
Ginger ale: Put 1-2 tablespoons of the strained ginger syrup into a glass, fill with cold club soda or seltzer. Add a sprig of fresh mint or basil and ice if you wish. Leave the ginger in the syrup for additional flavour. Add a teaspoon or more to a cup of hot or iced tea. Make tea using 1-2 tablespoons of the ginger syrup with hot water. Save the ginger to use in baked goods, including gingerbread! Make a Ginger Mojito - follow the directions for Ginger ale and add a jigger of rum.
