Metric Cups
  • 63 millilitres olive oil
  • 3 cloves garlic (crushed)
  • 2 teaspoons oregano
  • 63 millilitres balsamic vinegar
  • 1 litre chicken stock
  • 6 slices ciabatta
  • fresh parsley (to garnish)
  • fontina cheese
  • 2 fluid ounces olive oil
  • 3 cloves garlic (crushed)

  • 1⅘ pints chicken broth
  • 6 slices ciabatta
  • fresh parsley (to garnish)
  • fontina cheese

Method

Bill Granger's Onion Soup is a community recipe submitted by Krakra58 and has not been tested by Nigella.com so we are not able to answer questions regarding this recipe.

  • Heat the oil not to hot, fry the garlic, stir untill you smell it, then add the onions with some salt, cook for 7 minutes, keep stirring.
  • Then reduce heat and cook for 25 minutes until the onions are golden brown, check every now and then that the onions don't burn!
  • Add the Oregano, vinegar and cook for another 10 minutes.
  • Spoon soup into soup bowls, top with a slice of ciabatta and cheese.
  • Place it under a grill untill cheese melts.
  • Garnish with some parsley and serve.
