Corn Relish

In a large pan,combine corn, onion, red bell pepper, garlic, jalapeno pepper, sugar, broth and vinegar. Bring to boil, stirring to disolve sugar. Reduce heat, simmer, uncovered 20 minutes until corn is tender. Remove from heat. Cool to room temperature, stirring occasionally. Drain, stir in chives, cilantro, salt and pepper. Mix well, stir in raspberry vinegar. Spoon into serving dish. Cover and refrigerate until serving.
Introduction
Lovely with fall and winter dishes or for grilled fish and meat on a summers day!

- 16 ounces frozen sweetcorn kernels
- ¼ cup chopped red bell peppers
- 1 teaspoon chopped garlic
- ½ teaspoon chopped jalapeno peppers
- ½ cup sugar
- 1 cup chicken broth
- 1 cup apple cider vinegar
- 1 tablespoon chopped fresh chives
- 1 teaspoon chopped cilantro
- ½ teaspoon salt
- ½ teaspoon cracked black pepper
- 1 tablespoon raspberry vinegar
