Gingered Melon/Lime Compote

In a saucepan, combine water, wine, sugar, limejuice, limepeel and ginger, bring to a boil and simmer, stirring until sugar is dissolved. Add the melon balls and simmer 5 minutes. With a slotted spoon, transfer melon to a bowl and reduce poaching liquid until lightly thickened. Strain syrup over the fruit and stir in the crystallized ginger. Let cool and chill, covered for 2 hours.
Introduction
Rather than hiding these lovely fruits under a piecrust, (allthough nothing wronge with that!), let them lighten up your room to add sparkle to table and plate alike!

- 2 cups water
- 1 cup dry white wine
- 1¼ cups sugar
- 4 tablespoons lime juice
- 3 slices lime peel
- 2 tablespoons grated fresh gingerroot
- 3 cups melon balls (cantaloupe, honeydew or Crenshaw)
- 2 tablespoons minced candied stem ginger
