Ingredients

  • 100 grams feta cheese
  • 10 black olives (pitted)
  • 4 chicken breasts
  • 1 aubergine
  • 2 large tomatoes
  • 2 cloves garlic
  • 1 pinch of salt
  • 1 pinch of pepper
  • 3½ ounces feta cheese

Method

  • Crumble feta and chop olives, mix.
  • Cut pockets into chicken fillets and put in feta & olive mixture.
  • Slice aubergine, tomatoes and peeled garlic cloves and put the slices into an oven dish. Put the chicken fillets on top.
  • Sprinkle some salt and pepper.
  • Bake at 200 C for about 35-40 minutes or until the chicken is done and the vegetables tender.
