Metric Cups
  • 1 bunch rhubarb
  • 1 punnet strawberries
  • 2 green apples
  • caster sugar
  • orange peel (2 strips, or lemon peel)
  • 1 teaspoon vanilla
  • ½ teaspoon cinnamon
  • puff pastry (shop bought)

Method

  • Chop rhubarb and put in saucepan with enough water just to cover the bottom on high heat.
  • Peel core and chop apples and add to the pan with spices. Hull and tear strawberries and add to the pan. by this time the rhubarb should be cooked, add sugar to taste and cook till apples just starting to go soft.
  • Put in pie dish, cover with puff pastry and cook at high heat (230 degrees) till top has browned.
  • Serve with cream or ice cream
