Ingredients

Serves: 2

Metric Cups

For the Chicken and Batter

  • 4 chicken breasts
  • egg whites
  • plain flour
  • water (cold)
  • 1 pinch of salt
  • soy sauce

For the Sweet Chilli Sauce

  • water
  • caster sugar
  • red wine vinegar
  • thai fish sauce (nam pla)
  • oyster sauce
  • 2 fresh red chillies

For the Chicken and Batter

  • all-purpose flour
  • water (cold)
  • 1 pinch of salt
  • soy sauce

For the Sweet Chilli Sauce

  • water
  • superfine sugar
  • red wine vinegar
  • thai fish sauce (nam pla)
  • oyster sauce
  • 2 fresh red chiles

Method

Chicken in Batter With Sweet Chilli Syrup is a community recipe submitted by lilmems and has not been tested by Nigella.com so we are not able to answer questions regarding this recipe.

  • Cut the chicken breast into cubes and put to one side. then in another bowl mix 2 egg whites with 3tbs of cold water and the pinch of salt then mix with the plain flour till it looks like Yorkshire pudding batter but a bit thicker so it will coat the chicken.
  • In a pan mix together 2 tbsp of all the sauces together , the soy sauce , sweet chilli sauce, water red wine vinegar , fish sauce , oyster sauce and add 4 tbsp of caster sugar and chop the fresh red chillies and put on the heat and bring to the boil and boil for about 5-10 mins till it looks like its getting like syrup pour out into a small dish and leave to cool this should thicken more as it cools.
  • As the syrup is cooling get the chicken and add it to the batter and mix so all the chicken is coated then drop a few pieces into hot oil about 170'c and fry till golden and turn out onto paper then dip in the syrup and eat.
  • This recipe works well with king prawns too. This recipe was made by me to use all the sauces that was left in the cupboard and found it was gorgeous any comments if you decide to try this would appreciated and feel free to change it to your own taste hope u enjoy it my friends and family love it thank you , ems
