Boil 1st lot of ingredients for approximately 4 mins… watch it doesn’t catch on the bottom and burn. LET IT COOL. Then add 2nd lot of ingredients. Mix together gently and pour into paper lined loaf tin – I use my largest loaf tin. Bake @ 180c for approximately (test with skewer) 1 hour 7 minutes & cover with tin foil half way through to stop top getting too browned.

For the 1st Lot
- 125 grams butter
- 250 millilitres sugar
- 1 teaspoon bicarbonate of soda
- 400 grams mixed dried fruit
- 225 grams pineapple chunks
For the 2nd Lot
- 2 eggs (beaten)
- 500 millilitres flour (sifted with baking powder)
- 2 teaspoons baking powder
For the 1st Lot
- 4 ounces butter
- 1 cup sugar
- 1 teaspoon baking soda
- 14 ounces mixed dried fruit
- 8 ounces pineapple chunks
For the 2nd Lot
- 2 eggs (beaten)
- 2 cups flour (sifted with baking powder)
- 2 teaspoons baking powder
