Ingredients

Serves: 4

Metric Cups
  • 500 grams broccoli (coarsely chopped including stalks)
  • 25 grams butter (just for frying onion)
  • 1 onion (chopped)
  • 1 teaspoon sugar
  • 60 grams cheese (tasty)
  • 1250 millilitres chicken stock
  • 188 millilitres cream (or milk)
  • salt
  • pepper
  • 17⅔ ounces broccoli (coarsely chopped including stalks)
  • ⅞ ounce butter (just for frying onion)
  • 1 onion (chopped)
  • 1 teaspoon sugar
  • 2⅛ ounces cheese (tasty)
  • 44 fluid ounces chicken broth
  • 7 fluid ounces cream (or milk)
  • salt
  • pepper

Method

Tasty Broccoli Soup is a community recipe submitted by Lilybell and has not been tested by Nigella.com so we are not able to answer questions regarding this recipe.

  • Sauté onion in butter add vegetables & stock, bring to boil, simmer till tender.
  • Put through blender, return to pot & add sugar, seasonings (I omitted salt, due to stock), cheese & milk.
  • Heat but do not boil.
  • Serve with fresh hot bread – yummy.
  • I have made with 50% cauliflower 50% broccoli very nice, would also make a nice entrée for dinner party with fresh hot crusty bread rolls.
