Pre-heat oven to Gas 6 In a large bowl mix flour, baking power, bicarb, spice and salt. In another bowl cream butter and sugar. Add the eggs one at a time to the butter mix and mix well. Beat into the butter and egg mix 1/3 of the flour and 1 tbsp of soured cream and mix. Repeat until all the flour and cream are used up. Put water, chocolate and coffee in a pan and heat until the chocolate has melted. Fold this into the cake batter along with the orange zest. Don't be tempted to beat it. It is a very thin batter. Pour into muffin cases and bake for 20-30 minutes. Cool and decorate with chosen icing. Enjoy.

Serves: 10-12 muffins
- 5 ounces all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- 1 teaspoon pumpkin pie spice
- 1 pinch of salt
- 3½ ounces softened butter
- 5½ ounces soft dark brown sugar
- 2 large eggs
- 3 tablespoons sour cream
- 4 fluid ounces boiling water
- 3 ounces bittersweet chocolate
- 1 teaspoon instant coffee
- 1 orange zest
- instant royal icing (or glace icing)
