Cheese Cream

Grate cheese. Cream butter well in basin, then work in the cheese gradually. When the mixture becomes stiff, add the hot milk and continue until it is light and creamy. Add herbs to taste or leave plain. Season well with salt and pepper. Serve with toast or as a sandwich filling.

Sandwich filling For use on toast. From an old Cordon Bleu course. I used this recipe and the potted cheese very often.

- 1 milk
- mixed chopped herbs
