A Simple Spicy Tomato Sauce

Introduction
This is a really fresh, zingy sauce. You can adjust the amount of chilli to your taste, but I like it quite spicy. Inspired by the original Bill Granger recipe, I serve this with trout or salmon that has been grilled or pan fried to get a crispy skin. I love it with tagliatelle, tossed with creme fraiche (helpful if the sauce is really spicy!) and baby spinach.

Ingredients
Serves: 2-3
- 1 teaspoon olive oil
- 1 large red chilli (finely sliced into rings)
- 5 centimetres fresh ginger (grated or finely chopped)
- 3 cloves garlic (finely sliced)
- 400 grams tomatoes (fresh and diced)
- 2 tablespoons soy sauce
- 1 tablespoon sugar
- 1 teaspoon olive oil
- 1 large red chile (finely sliced into rings)
- 1⅞ inches fresh gingerroot (grated or finely chopped)
- 3 cloves garlic (finely sliced)
- 14⅛ ounces tomatoes (fresh and diced)
- 2 tablespoons soy sauce
- 1 tablespoon sugar
