Avocado and Lime Bread With Pumpkin Seeds

Oven preheated to 350ºF. Grease a pan w/ butter and line with parchment paper. Mash avocados as you would bananas. You might try adding half a banana instead if you are not sure on the avocado taste. Mix together with lime juice, zest and the sugar. If you find it a bit dry add a couple tablespoons of water. Add the dry ingredients and mix together well (will be a bit lumpy due to avocado so don't fret). I have tired this with a touch of chili powder and added a nice dimension. Pour into the pan and sprinkle the pumpkin seeds over top. Bake for 45 min to an hour.
Introduction
Tried this out because I had extra avocados and figured why not :) Depending on my mood I will add a touch of chili powder or nutmeg to the dry ingredients. You can add a half of banana instead of the extra ½ avocado it will be a bit sweeter.

- 1 large avocado
- zest of 1 lime
- 1 tablespoon lime juice
- 1 large egg
- 3 cups soft light brown sugar
- 1 cup wholewheat flour
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1 sprinkling of pumpkin seeds
- 2 tablespoons water
