Ingredients

Serves: 4

Metric Cups
  • 500 grams penne pasta (or pasta of your choice)
  • 40 black olives (pitted)
  • 100 grams feta cheese
  • 1 pinch of curry powder
  • 3 medium eggs
  • 4 leaves fresh mint
  • 17⅔ ounces penne pasta (or pasta of your choice)

Method

Cook the pasta according to packet instructions in plenty of salted boiling water.

In the meanwhile, cut the Feta cheese into small cubes (about 5mm x 5mm) and slice the olives.

When the pasta is ready, drain it and put it back on the fire with the eggs in it; stir and stir until the eggs are cooked and well mixed with the pasta.

Put the olives and the feta into the pasta+eggs, and add a pinch of curry.

Add the mint and... ENJOY IT!
