Ingredients

Serves: serves 2

Metric Cups
  • 500 grams pork (fillet)
  • 1 red pepper
  • 1 stick celery
  • 1 medium onion
  • 1 tablespoon vegetable oil
  • 1½ teaspoons curry powder (to taste)
  • 300 millilitres chicken stock
  • 1 tablespoon mango chutney
  • 1 pinch of salt
  • 1 pinch of pepper
  • 17⅔ ounces pork (fillet)
  • 1 red bell pepper
  • 1 stick celery
  • 1 medium onion
  • 1 tablespoon vegetable oil
  • 1½ teaspoons curry powder (to taste)
  • 11 fluid ounces chicken broth
  • 1 tablespoon mango chutney
  • 1 pinch of salt
  • 1 pinch of pepper

Method

  • Slice fillet and lightly dust in seasoned flour. Fry in tablespoon of oil until sealed and then remove.
  • Fry an onion, celery stick & red pepper until softened.
  • Add the pork back in and cook for two minutes.
  • Add the curry powder and 300 ml of chicken stock. Then stir in the Mango Chutney.
  • Allow to thicken slightly ensuring the pork is cooked through.
  • This is wonderful with plain boiled rice – I always want more after I’ve eaten it – Matt xx ;o)
