Delicious Pork Fillets

Slice fillet and lightly dust in seasoned flour. Fry in tablespoon of oil until sealed and then remove. Fry an onion, celery stick & red pepper until softened. Add the pork back in and cook for two minutes. Add the curry powder and 300 ml of chicken stock. Then stir in the Mango Chutney. Allow to thicken slightly ensuring the pork is cooked through. This is wonderful with plain boiled rice – I always want more after I’ve eaten it – Matt xx ;o)
