Date (Raisin) Loaf

Preheat oven to 180°C. Put water, fruit, sugar, soda and butter into a medium saucepan and stir over low heat till the butter has melted. Add the flour, salt and egg and stir till combined. Pour into a greased and lined loaf tin-approx. 23 x 13 x 7cm (this is the size tin in Nigella's recipes, mines a bit smaller and works fine). Bake for 45 minutes or until skewer comes out clean.
Introduction
Another nan recipe-aren't they the best ones! Yummy plain, with butter or toasted for breakfast the next day. My nan uses raisins but I use dates so it's your choice.

- 1 cup dates (or seeded raisins chopped)
- 1 cup brown sugar
- 1 teaspoon baking soda
- 2 tablespoons butter
- 2 cups self-rising flour (sifted)
- 1 lightly beaten egg
- 1 pinch of salt
