Leek Strudel

This is strudel made from filo pastry, very suitable for party, especially if some of people are vegetarian, but I think that everybody like it.

Ingredients

Serves: 4-6

Metric Cups
  • 500 grams filo pastry
  • 500 grams leeks
  • 1 clove garlic
  • 100 grams rice
  • 50 millilitres vegetable oil
  • 50 millilitres water (hot)
  • ½ teaspoon curry powder
  • olive oil
  • salt
  • pepper
  • 18 ounces filo pastry
  • 18 ounces leeks
  • 1 clove garlic
  • 4 ounces rice
  • 1¾ fluid ounces vegetable oil
  • 1¾ fluid ounces water (hot)
  • ½ teaspoon curry powder
  • olive oil
  • salt
  • pepper

Method

Leek Strudel is a community recipe submitted by Mirjana and has not been tested by Nigella.com so we are not able to answer questions regarding this recipe.

  1. Preheat oven the 200°C/400°F/gas 6 and butter large baking dish.
  2. Boil rice and cut fine leek. In a frying pan put little olive oil and fry leek stirring frequently until tender (about 10 minutes), and add chopped garlic and fry 1 minute. Add boiled rice, curry , salt and pepper (I like lot of pepper for piquant taste) and mix well to combine and let cool for a while.
  3. Meanwhile heat water and mix well with oil.
  4. Sheet of filo pastry sprinkle with water oil mixture and put another sheet of pastry on top put and spread some leek mixture. If sheet of filo pastry is very thin put 3 sheets.
  5. Roll in strudel and put in prepared baking dish. Repeat until all used.
  6. Brush strudel on the top with oil water mixture and bake in preheated oven about 30 minutes. Leave to be worm and cut in pieces. Serve worm but it is also good on the room temperature. Can be frozen and later worm in microwave.
