- Preheat oven the 200°C/400°F/gas 6 and butter large baking dish.
- Boil rice and cut fine leek. In a frying pan put little olive oil and fry leek stirring frequently until tender (about 10 minutes), and add chopped garlic and fry 1 minute. Add boiled rice, curry , salt and pepper (I like lot of pepper for piquant taste) and mix well to combine and let cool for a while.
- Meanwhile heat water and mix well with oil.
- Sheet of filo pastry sprinkle with water oil mixture and put another sheet of pastry on top put and spread some leek mixture. If sheet of filo pastry is very thin put 3 sheets.
- Roll in strudel and put in prepared baking dish. Repeat until all used.
- Brush strudel on the top with oil water mixture and bake in preheated oven about 30 minutes. Leave to be worm and cut in pieces. Serve worm but it is also good on the room temperature. Can be frozen and later worm in microwave.
