Sweet and Sour Balti Chicken

Blend together the tomato puree/yoghurt/garam Masala/chili powder/garlic/mango chutney and sugar in a mixing bowl Heat the ghee in a wok. Lower the heat slightly and pour in the spice mixture. Bring to the boil and cook for 2 mins. Stirring occasionally. Add chicken pieces and stir well until cooked. Add the water to thin the sauce slightly. Continue cooking for 10-15 mins or until the chicken is tender. Finally, add the fresh chillies, coriander and cream and cook for a further 2 minutes until the chicken is cooked thoroughly.

- 2 tablespoons Greek yoghurt
- 1½ teaspoons garam masala
- 1 teaspoon chili powder
- 2 cloves crushed garlic
- 2 tablespoons mango chutney
- 1 teaspoon salt
- ½ teaspoon sugar
- 2 tablespoons vegetable ghee
- chicken breasts
- ⅕ pint water
- 2 fresh green chiles
- 2 tablespoons cilantro
- 2 tablespoons heavy cream
