Chemmeen Varatiyathu (Prawns Roast)

Heat oil in a pan and put coriander, red chilly, pepper, 3-4 shallots, 6-7 curry leaves. Saute well and grind this into fine paste. Add required amount of salt and turmeric powder to cleaned prawns along with the ground paste. Marinate the prawns for 10min. Heat oil in a pan and put the balance shallots and ginger-garlic paste and saute till brown. Put the marinated prawns and add some water into it. Put it in low flame, close the pan with a lid, and cook till prawns are boiled. Keep stirring the prawns. Put 1tsp coconut oil on top of the curry and garnish with some curry leaves.
