Introduction

This is a very comforting and quick pasta to make when you have not been to the shops. It is a family favourite. I devised it one day out of desperation.

Ingredients

Serves: 4

Metric Cups
  • 500 grams pasta (of your choice)
  • 2 medium onions
  • 1 packet smokey bacon (streaky)
  • 50 millilitres olive oil
  • 125 grams mushrooms (sliced)
  • 1 packet sundried tomatoes
  • Parmesan cheese (lots, to serve)
  • salt
  • pepper
  • 17⅔ ounces pasta (of your choice)
  • 2 medium onions
  • 1 packet smokey bacon (streaky)
  • 2 fluid ounces olive oil
  • 4⅖ ounces mushrooms (sliced)
  • 1 packet sundried tomatoes
  • Parmesan cheese (lots, to serve)
  • salt
  • pepper

Method

  • Cook your pasta as per instructions on the packet.
  • Sauté the onions and bacon in the oil until onions are soft and just turning golden, Add the mushrooms and toss about a few minutes.
  • Add the sundried tomatoes with all their juices. Stir for a few minutes and put the lid on the pan. Leave for about 5 - 10 minutes. You want to allow the tomatoes to slightly caramelise.
  • Add seasoning.
  • Drain the pasta saving 1/2 cup of the pasta water.
  • Toss the pasta in the sauce and serve with loads of cheese. If it needs moistening then add the reserved pasta water.

  • Additional Information

    I often add 1 teaspoon dried chilli flakes to the onions and once the pasta is stirred into the sauce I add 1-2 sliced avocados and toss very lightly and serve with loads of strong cheddar cheese.
