Prepare the crumble: Preheat the oven to 200C/390F. Chop the apples into pieces the size of your thumb nail. Mix with the cinnamon and the brown sugar. Melt the butter and mix, by hand, with the superfine sugar and oats. Grease an oven dish (ab. 10 inches in diameter) with butter, then put the apples in the dish. Spread the oat mixture on top of the apples as evenly as possible; don't worry if it's a little lumpy. Put the dish in the oven and bake for about 30 mins. Let it cool thoroughly. Cut the ice cream into pieces. Put it in a freezer-proof, flat-based dish. Break the apple crumble over it and mix the two together. Don't overdo it; you want a lumpy-ish texture, not an even puree. Keep in mind, though, that the pieces will harden once frozen, so no huge chunks will work. Gently push down the ice cream into the dish to make it even. Pop the lid (or a layer of clingfilm) on the dish and put it back in the freezer. Take to room temperature a good 15-30 mins before serving (depending on the texture of the ice cream and the shape of the dish used)
