Whisk together the oil and vinegar, add the yoghurt and stir well together. Add the garlic, cucumber and mint leaves and stir to combine. Leave for 2 hours or so in a cool place for flavours to develop. Serve drizzled with a drop more olive oil and a grind of black pepper on the top.
