Rub fat into flour as if making pastry, add sugar and fruit and mix well together. Add enough egg to combine and make a dough. Roll out and cut with pastry cutter and cook on lightly greased bakestone (or heavy bottomed frying pan) for a few minutes on each side until lightly browned.
Introduction
These are my grandmother's version of Welsh Cakes and were always cooked on a bakestone, although you could use a heavy based frying pan.

- 1 pound flour
- ½ pound butter
- ½ pound sugar
- 6 ounces Zante currants
- 2 beaten eggs
