Chicken Breasts Stuffed With Goats Cheese and Damsons

Cut Goats cheese in to 4 equal chunks Stone the damsons Create a pocket underneath the skin of the Chicken breast between it and the meat. Spread the Goats Cheese under the skin evenly. Crush the damsons slightly in your fingers to make them more spreadable and push them under the skin of the chicken breast. Cook in a pre-heated oven at 180 degrees celius for 30 - 35 minutes until the chicken is cooked throughout. Serve with steamed Potatoes and vegetables.

Introduction
This is a really easy recipe and can easily be adapted, I have used cherry tomato relish instead of Damsons or you could use Cranberries for a festive alternative.
