This is a really easy recipe and can easily be adapted, I have used cherry tomato relish instead of Damsons or you could use Cranberries for a festive alternative.

Ingredients

Serves: 4

Metric Cups
  • 4 chicken breasts (with skin on)
  • 200 grams goat's cheese (rectangular pack)
  • damson (a generous handful per breast)
  • 4 chicken breasts (with skin on)
  • 7 ounces goat's cheese (rectangular pack)
  • damson (a generous handful per breast)

Method

  • Cut Goats cheese in to 4 equal chunks
  • Stone the damsons
  • Create a pocket underneath the skin of the Chicken breast between it and the meat.
  • Spread the Goats Cheese under the skin evenly.
  • Crush the damsons slightly in your fingers to make them more spreadable and push them under the skin of the chicken breast.
  • Cook in a pre-heated oven at 180 degrees celius for 30 - 35 minutes until the chicken is cooked throughout.
  • Serve with steamed Potatoes and vegetables.
